Cooking with HERB, The Vegetarian Dragon

These recipes are for LOVE children. Kids who want to eat vegetarian food but not be too strict about it. You can have milk and cheese and all dairy productsas well as eggs. I call it L-O-V-E because L=Lacto (Dairy) O=Ovo (Eggs) V=Vegetables, E=Eaters.  Even if you're not a LOVE vegetarian I think you'll love some of these fun recipes. They're easy to make and very tasty.

Herb's Strawberry Slush

Serves 4
Here's what you'll have to hunt up:

2 cups of strawberries
2/3 cup of medium simple syrup

Step 1: Making simple syrup is, well, simple!
Just slowly cook 2/3 cup of sugar with 1 cup
of water until sugar is dissolved. Cook some
more until you've got only 2/3 cup - and let it
cool to room temperature before using.

Step 2: Add berries to a food processor
fitted with a steel knife, and pulse until
berries are chopped finely.
Don't turn it into mush!

Step 3: In a glass bowl mix berries and the
syrup and scrape into a plastic container
with a lid. Freeze it overnight.

Step 4: Set bottom of plastic container in hot
water for a few seconds to loosen the slush.
While still in container, cut with dull knife into
small chunks and plop into the processor.
With steel knife, process for a minute or less,
until the mixture turns to a creamy frozen
yummy glob. (Scrape down sides and
process again for another 10 seconds if not
smooth).

Spoon into chilled glasses and serve with a
berry on top of each portion.
