Cooking with HERB, The Vegetarian Dragon

These recipes are for LOVE children. Kids who want to eat vegetarian food but not be too strict about it. You can have milk and cheese and all dairy productsas well as eggs. I call it L-O-V-E because L=Lacto (Dairy) O=Ovo (Eggs) V=Vegetables, E=Eaters.  Even if you're not a LOVE vegetarian I think you'll love some of these fun recipes. They're easy to make and very tasty.

Kid's Recipes

Easy Chocolate Banana
Walnut Bread

Serves 6-8
Here's what you'll have to hunt up:

1/2 cup (120ml) sugar
3 tablespoons chocolate syrup
1 egg + 4 tablespoons canola oil
2 ripe bananas-fork mashed
2 cups (480ml) flour
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup (80ml) walnuts - chopped

1. Pre-heat oven to 350ºF/180ºC
regulo #4 In a bowl, with an
electric mixer, add the sugar, salt
egg, canola oil & chocolate syrup.
Mix until all is well blended. Add
fork-mashed bananas and mix
again on medium speed until
they're well blended in. Stop.

2. Add flour and baking powder
and walnuts to the bowl and mix
again until no white flour shows
and it's all thick and creamy.

3. With a rubber spatula scrape
dough into a non-stick loaf-baking
pan (about 9"x5"x3") (23x13x8cm)
that you have rubbed with a little
bit of butter or oil..

5. Bake for 1 hour. Cool on a rack.

To Serve: Cut in slices and place
on a plate, overlapping like a fan.

T I P S
I like to break the walnuts with my fingers
into rough bits. This recipe is best if the
bananas are very ripe. If you don't have an
electric mixer, you can do all this in a bowl,
by hand - with a whisk and a wooden spoon,
mashing the stuff in and mixing. The next
day you can toast slices lightly.
