Spaghetti Sandwiches

Here's what you'll need to hunt-up:
About 1 cup of leftover cold
spaghetti
(with the sauce mixed in it)
2 Tablespoons good olive oil
2 whole eggs - beat with salt & pepper
1/4 cup grated parmesan cheese
Sandwich bread & butter (or substitute)
Step 1: Turn on the oven broiler
to
high. Put rack about 4" from the heat.
Step 2: In a non-stick fry-pan
on med.
heat: put in the olive oil and then the
spaghetti. Cook and turn with wooden
spoon until the spaghetti is warmed.
Step 3: Pour eggs over and cook
30 seconds. Sprinkle cheese over
and slide pan about 4" under the
broiler heat.
Step 4: Broil until eggs are
firm
and the *frittata is lightly browned
on top. Slide out onto plate.
Step 5: Pile a
few slices of the frittata
on your favorite bread.. You've done it.
A first-class spaghetti sandwich.
(*pronounced free-ta-ta, which is what
this dish is called in Italian.)

Leave the door of the oven open when
the broiler is on so that the handle of the
fry-pan sticks out. And be sure to wear
an oven mitt when you take the pan out
so that you don't burn yourself. Don't
worry if the frittata isn't hot - it's just as
good served at room temperature.
