How To Cook Better Than Most Restaurants is a
step-by-step guide to cooking and entertaining that
is easy to follow, with interesting anecdotes about
Jules' restaurant experiences. He decided to prepare
all of the food for the photographs in this book himself,
with no assistance. "I'm intimidated by a lot of the
great food photos I see and I wanted my photos to
be a simpler and more honest representation of what
one person can actually do." The photographer, Jeannine
Kadow, also worked alone - shooting all of the dishes
in the warm natural light of Jules' French kitchen
garden without the benefit of lights, stylists or
assistants. "She used dishes, cloths and other items
that we had in the house, trying to keep everything
as basic as possible. Occasionally I was called to
hold a reflector or do a last minute fix."
He feels that the greatest compliment a cook can get
is when friends say: "How about cooking instead of
going out to a restaurant."
You will note that there are no recipes in the cookbook
for red meat, lamb, veal or pork products. Although
KickAssCooking is definitely not a vegetarian book
nor a collection for dieters, great care has been
taken to provide suggestions for healthful ingredients
and their methods of preparation. Guests who have
visited with Jules are always surprised to learn,
at the conclusion of their stay, that they have not
been served meat products. On the other hand fish
and chicken are included in many interesting new guises.
